• O’Hara’s Clubhouse, 354 Route 5, Elbridge: satisfactory (Oct. 2). Food contact surfaces not washed, rinsed and sanitized after each use and following any time of operations when contamination may have occurred. Non-food contact surfaces of equipment not clean. Insects, rodents present. Floors, walls, ceilings, not smooth, properly constructed, in disrepair, dirty surfaces. Follow-up field visit will be conducted to check that listed violations are addressed and to monitor flying insect activity. If violations persist or flying insect activity increases, a violation letter may be issued at time.

• Burly’s Firehouse Pub, 2 S. Main St., Jordan: satisfactory (Oct. 4). Handwashing facilities inaccessible, improperly located, dirty, in disrepair, improper fixtures, soap and single service towels or hand drying devices missing. Miscellaneous, economic violation, choking poster, training. Permit and allergen notice posted. Signage link to choking poster provided. Establishment is primarily beverage service with limited food service on occasion (crock pots and microwave).
• Wildwoods Event Center, 5740 Fikes Road, Elbridge: satisfactory (Oct. 4). Effective measures not used to control entrance (rodent, insect-proof construction). Harborage areas available for rodents, insects and other vermin. Discussed with kitchen staff that at least 90 days of clam tags must be maintained onsite and be available at time of inspection. Violation not recorded at this time as owner indicated that tags are maintained for at least 90 days. If all tags cannot be produced during all future inspections, a critical violation would result. Discussed proper storage of potentially hazardous foods at time of inspection.
• Kosta’s Bar & Grill, 105 Grant Ave., Auburn: satisfactory (Oct. 8). The slicer located in the main kitchen observed to be covered in old food debris. The door handles of the coolers in the kitchen are covered in a film of food debris. The filters for the exhaust hoods located both in the upstairs and basement kitchens require cleaning due to grease buildup. There is old equipment along with a significant amount of miscellaneous dry goods and non-restaurant supplies stored throughout the facility.
• Skaneateles Country Club, 3344 W. Lake Road, Skaneateles: satisfactory (Oct. 8). Floors, walls, ceilings, not smooth, properly constructed, in disrepair, dirty surfaces. Miscellaneous, economic violation, choking poster, training. Discussed posting permit, allergen notice and choking poster.
• King Ferry Bowling Center & Pizzeria, 1007 Route 34B, King Ferry: satisfactory (Oct. 9). Gaskets on doors of three-door upright cooler in disrepair. Interior of shelf-top microwave oven unit requires cleaning, grease/food debris accumulation observed. Lack paper towels in patron bathroom.
• Spoon and Fork Asian Cuisine, 264 Genesee St., Auburn: unsatisfactory (Oct. 9). Improper hot holding of potentially hazardous foods. Approximately 2 quarts of miso soup and 1 gallon of chicken broth in hot holding for service were observed to have internal temperatures of 126 degrees Fahrenheit. at the time of inspection. The soups had been made less than two prior to inspection and were reheated to above 165 degrees F. and returned to holding. The temperature of the holding unit was also increased. Multiple five-gallon buckets containing food products are being stored on the floor of the walk-in cooler. In use cleavers are improperly stored between equipment on the main cook line. The shelving in the walk-in cooler is covered in a thin coating of rust. Sanitizing solution was not properly prepared at the time of inspection. Food contact surfaces were not adequately sanitized after and or prior to food preparation. The hot water valve for the dedicated hand wash sink is not in working order.
• China Wok, 19 Seminary St., Auburn: satisfactory (Oct. 9). Food products both cooked and raw are being stored in non-food grade containers.
• Dunkin', 160 State St., Auburn: unsatisfactory (Oct. 10). Foods adulterated or received from unapproved sources. The stored ice located in the under-counter ice well was found to contain food particles and black flecks of debris. The in-use ice scoop was being stored in a stainless steel container filled with unclean, stagnate water which contained decomposing food debris. The ice was removed and discarded, the ice well, the scoop and the scoops storage container were washed, rinsed and sanitized before being returned to service. The under-counter ice well lacks an adequate lid to prevent possible contamination. The in-use ice scoop was improperly in and unclean container. There is mildew build up present on the baffle inside the ice well under the ice maker. There is a significant buildup of food debris present along the drawer edges on the main sandwich preparation cooler.
• Dilly’s, 1579 Clark St. Road, Aurelius: satisfactory (Oct. 10). The filters in the exhaust hood require cleaning due to significant grease buildup.
• 10-10-BBQ, 5 Adams St., Moravia: satisfactory (Oct. 11).
